Yammy... that taste goood!

Last weekend me and my roommate, Kari, were having people over for a potluck. Sounded like a great idea, but I had one problem, I didn't have the time or money to make my dish. Then, at the last minute, I saw my solution: YAMS!!! :) They're cheap, easy and so delicious. This is what I did:

Preheated the oven to 400 degrees, grabbed 5 large yams (unpeeled) and cut a few holes in each, placed them on a cookie sheet (because they drip when cooking), and tossed them in the oven. Then I went and got ready for the party. Soooo easy, right?

After 20 minutes or so (varies depending on the size of your yams) I began checking on them by poking them with a fork until they are tender (this can take anywhere between 20-45 minutes). Then I took them out and let them cool for a few minutes. I peeled them very carefully because they are HOT - ask my right thumb (ouch!). Then I sliced them into 1/4-inch thick slices and put them back on the cookie sheet. I drizzled them with melted butter and maple syrup, popped them into the oven again (now set to broil) and let them broil for a couple minutes until the maple syrup caramelized. There you have it: a low fuss, cheap, healthy treat.
The great thing about yams is that they can be tailored for any craving. They're good sweet, salty, spicy, savory, etc. Sometimes I'll peel a few and chop them up and boil them with some white potatoes (to cut their sweetness) and mash them with garlic, butter, sea salt, cayenne, and maple syrup to combine all the tastes together into one delicious meal. Play around and see what you come up with.

I find that I crave yams and potatoes during the winter. There's something nurturing and warming about root vegetables. Root vegetables are also very grounding for anyone who feels like they're spending too much time in their head or for people who experience anxiety. Yams also are a great source of vitamin c and soluble fiber.
