Rawpple Pie :)

Raw Apple Pie
This my favorite raw recipe to date. It will satisfy any sweet tooth. It's soooooo good! It's a great dessert for holidays. Mmmm... enjoy!
Ingredients:
Cashew Crust
1 cup cashews
½ tsp vanilla extract
1 tsp sea salt
1 ½ cup pitted dates
1 ½ cup shredded coconut

Filling
4 cups of apples peeled and cubed (about 5-6 apples), soaked for 3-5 hours prior in water with a little lemon juice (to soften and prevent browning)

Syrup
1 cup pitted dates
1 Tbsp ground cinnamon
1 cup of water as needed

Preparation:

To prepare crust:
• First use some of the shredded coconut to “flour" the bottom of your pan.
• To make crust, pulse the cashews, vanilla, and salt in a food processor.
• Slowly add the dates while processing until the mix looks like a ball of dough.
• Take the dough out and press into the pan until it is spread evenly.

To make the syrup:
• Blend dates, and cinnamon, adding in the water until desired thickness.

To make the filling:
• Peel and cut your apples into cubes.
• Soak your apples in water with a little lemon juice for 3-5 hours
• When the crust is assembled, strain out apples, pour on the syrup, lightly toss, and spoon into the pan.
• Keep in the fridge for up to 2 days. Serves about 8.

You could get very creative with this recipe. The crust is soooo good that it could go with just about anything sweet. Play around!

It seems to be fairly low sugar, and with my Dad being diabetic I think it will be good. Anyway, keep the recipes coming. And I'd love to catch up sometime soon. - Bacon
